Coconut Cookies!


One of my favourite cookies!

Ingredients:
125g Coconut oil
100g Sugar
1/2 cup shredded coconut
3 Tablespoons cornflour
1 1/2 cups flour


Melt the coconut oil and pour the sugar in. Cream the oil and sugar and add the coconut and cornflour. add the flour and mix, if the mixture is still wet add more flour.

These cookies are super simple and are sure to please the family!

Banana Chocolate Muffins

Yum! Chocolate and Banana Muffins!

150g Butter (Room temp)
3/4 Cup sugar
2 Eggs, beaten
1 Teaspoon vanilla essence
2 Cups flour
2 Teaspoons baking powder
1/2 Teaspoon baking soda
1/2 Cup milk
2 Bananas (Mashed)
2 Tablespoons cocoa
1/2 Cup chocolate chips


In a bowl Mix the butter, sugar, eggs and vanilla.
Put in the cocoa and baking powder in,
then add the baking soda dissolved in the half a cup (Warmed) Milk.
add the last remaining ingredients.
Place into Muffin tins, and bake until Golden on top (At 180 degrees)

Devilled Meatballs

Ingredients

Makes about 4 Servings
500 g sausage meat
1/2 cup breadcrumbs
1 apple
2 onions
1/2 apricot sauce (or any kind of chutney works if you don't have apricot sauce)
1 tablespoon beef stock (Dissolved in 2 cups boiling water)
1-1/2 extra cups water
thickener (Mix about 1/2-1/4 cups flour with water until it makes a runny paste)
3 teaspoon soy sauce
1 teaspoon mustard powder
1 teaspoon curry powder
 
Cut up the sausage meat and roll it into small balls, coat the meatballs with bread crumbs and then cook them until brown in the middle. Remove the meatballs and brown the onions. When the onions are brown add the apple (Grate it first) and lower the heat. Then add the apricot sauce, soy sauce, beef stock-water, mustard powder, and curry powder. Let simmer for about 15 mins, add more water if required. Then using the thickener thicken the mixture and add the meat balls - cook for another 15 mins.

Coconut Macaroons


Simple yet Delicious

Ingredients

1 Cup desiccated coconut
1/2 Cup sugar
1 Tablespoon cornflour
1 egg -Beaten-

Makes about 16

Preheat the oven to about 180*C. Line 1-2 baking trays with baking paper.
In a bowl mix the coconut, sugar and cornflour. then add the egg and mix with a spoon or a knife.
Use a spoon to place the mixture onto the trays in balls, then cook in the oven for 15 minutes (or until slightly golden.)

store these coconut goodies in a air-tight container.

Toll house chocolate chip cookies!

every body's favourite cookie!

Makes: about 30
Cooking time: 20 minutes

Ingredients
175 grams butter (softened)
3/4 cup brown sugar
3/4 cup white sugar
2 eggs'
2-3 teaspoons vanilla essence
21/4 cups flour
1 teaspoon baking powder
2 cups chocolate chips

Preheat the oven to 180 C
In a Big bowl mix the butter and sugars together,
Then add the eggs and beat.
sift the flour and baking powder in along with the chocolate chips.

bake for 20 minutes on a heat proof tray

store in an air tight container

Quick Cowboy Sandwiches

These sandwiches will delight your family!

makes 4-5 sandwiches

Ingredients

4 small onions (chopped)
1/2 cup chopped bell peppers (any colour)
1 Teaspoon crushed garlic
2/3 Teaspoon mustard powder
1/2 cup Tomato sauce
3 Teaspoons White sugar
A 420g can of baked beans
Salt to taste
Ground Black Pepper to taste
A few Slices of White bread
Butter or margarine

In a frying pan on medium, brown the mince and chopped onion,
 then add the Bell pepper.
Stir in the garlic, mustard powder and sugar,
Add the Tomato sauce and Baked beans.
Reduce the heat and simmer for 10 Minutes
                          ***
While the meat mixture is cooking take at least 8 slices of bread
and spread margarine (or butter) on one side. Then  place the buttered side
face down onto a tray and toast them in the oven.

Season the mince then Sandwich the meat mix between
two slices of bread and place on a plate.
serve these cowboy sandwiches hot.
